Experiments with acrylic paint

Having been snowed in, and run out of white oil paint, I had to experiment with acrylics. I was trying to get some big textural pieces - like the detail below. ....I'm now thinking do I just have to use more paint and when do I let it dry, do I do it all in one go, like these small paintings, or do I plan it and let bits dry before moving on?
